Title: From Garbage to Gourmet: Sustainable Waste Prevention and Mushroom Cultivation from Used Coffee Grounds

Kansas State University’s team is designing a project that demonstrates the benefits of composting versus landfilling campus waste. Using waste from a popular coffee shop, the team is using spent coffee grounds to grow gourmet mushrooms. Nearly 80% of campus waste – which could be recycled – ends up in landfills. By demonstrating the benefits of composting, the team builds campus-wide support for recycling.
